This is a golden honey with a gentle scent of chilli on the nose. The flavour of the chilli comes through almost immediately and the honey has a silky, almost buttery finish. The chilli has a fruity flavour that lingers on but doesn’t punch us in the throat!
It certainly has chillies in it! But they do balance well within the sweetness of the honey. The heat recedes to warmth on the finish and then leaves a glow on the palate which is pleasurable.
This deep golden honey welcomes with a floral, spicy, vegetal fragrance. On the palate, there’s a pleasing evolution of citrus zest and florals into a wave of natural Scotch bonnet chilli heat, that follows through to a long spicy-floral finish. Both the characterful honey chosen here, and the well-judged integration of Scotch bonnet heat are a success.
